A taste of Mexico, kept honest in Burbank.

We opened the doors with one rule — serve the food we grew up on. Mole simmered for hours. Carnitas crisped at the edges. Tableside guacamole with a real molcajete. A salsa bar that earns its name.

On any given night you'll find regulars who've been coming since opening week, a karaoke crowd warming up at the bar, and a back room ready for a quinceañera or an impromptu dance floor.

Diana's Mole Plate

A recipe Diana brought with her from Tlaxcala — a sauce simmered for the better part of a day, built from more than twenty ingredients. Dried chiles toasted slowly. Charred tomatoes and tomatillos, plantain, sesame, almonds, peanuts, a square or two of dark chocolate. Cinnamon, clove, anise, a pinch of cumin.

Ladled over shredded chicken with rice, beans, and a stack of warm tortillas to chase it. It's the kind of mole that doesn't show up on most menus this side of the border. Order it at least once.
